What we're eating for this week

S. Falafel on pita w/ cucumbers, tomatoes, pepperoncini, spinach and raita
S. Spankopita & Greek pasta salad (my neighbor's bringing a  mandarin orange gelatin mold)
M. Fishcakes w/ a lemony garlic mayo, couscous, spinach salad
T.Enchiladas
W. Leftovers
R.Lasagna
F. Veggie burgers and fries
S. Kimmy Tso Chicken w/rice and broccoli

Summer Menu and frozen family favorites.

Well, in the summer our tastes definitely change. I hardly feel like cooking in our un-airconditioned bungalow! BUT, we still need to eat.
Below is what we ate this week. Also, try these three tasty summer time treats!

Grape-cicles: Wash off some seedless grapes and pop'em in the freezer.Try other fruits, like cherries or peaches!
Choco-nana-cicles: Cut a banana in half, stick a popcicle stick in it, dip it in melted chocolate chips and freeze on some waxed paper.
Quick frozen yogurt: Toss a few store bought yogurt cups in the freezer and enjoy. Best not to get the ones with fruit on the bottom. You can also make yogurt pops but my way is less work ;)

Monday: roasted chicken, rosemary potatoes, steamed broccoli
Tuesday: chicken (leftover from yesterday), cheese, summer squash quesadillas with salad.
Wednesday: Spaghetti and turkey meatballs
Thursday: veggie burgers, pickles, chips
Friday: chicken tenders (lightly coated with bread crumbs, fried, then put in the oven to finish
            corn on the cob, steamed broccol, herbed cous cous.

**we had a lot of chicken this week becaue it was on sale**

What we're eating for din din : Week of 15 May

Sun: Chicken kabods with peanut sauce, steamed broccoli and rice
Mon: Veggie burger and potato wedges
Tues: Salmon cakes, roasted aspargus & cous cous  with veggies and parmesan
Wed: Turkey Tacos & squash bake
Thu: Penne w/ veg and spinach salad w/ sesame garlic vinaigrette
Fri:  Pizza night (homemade or not....depends)
Sat: Soup (ramen noodles), sandwiches and salad

Are you looking for weekly family menus?

I have noticed that lots of folks are directed to my blog because they have come looking for weekly family type menus. I began posting my menus because friends are always interested in what I'm cooking. Also, I've always found it inspiring to hear what everyone else eats on a daily basis. We all get stuck in food ruts and need a little inspiration now and again, right?

So, if you have stopped by to see what's for dinner, have a peek and leave a comment or two about what things you'd like to see here. I'll be putting some effort into this area in the next few weeks.
